Fluffy gluten free and dairy free oat flour pancakes made in a blender for an easy, healthy, and wholesome breakfast.

Ingredients

1 1/2 cups oat flour
1 ripe banana or 1/2 cup applesauce
1 cup plant-based milk
2 eggs or 2 flax eggs
1 tsp baking powder
1 tbsp maple syrup (optional)
1 tsp vanilla extract
1/2 tsp cinnamon (optional)
Pinch of salt

Instructions

  • Add wet ingredients to blender.
  • Add oat flour, baking powder, and spices.
  • Blend until smooth batter forms.
  • Let batter rest for a few minutes.
  • Heat and lightly grease pan.
  • Pour batter to form pancakes.
  • Cook until bubbles form, then flip.
  • Cook until golden on both sides.
  • Serve warm with toppings.

Notes
