Soft and chewy gluten free breakfast bars made with oats, natural sweeteners, and customizable mix-ins for an easy make-ahead breakfast.

 

Ingredients

2 cups gluten-free rolled oats
1 cup almond flour
2 ripe bananas, mashed
1/3 cup honey or maple syrup
1/2 cup nut butter
2 eggs
1 tsp vanilla extract
1 tsp baking powder
1/4 tsp salt
1/2 cup mix-ins (chocolate chips, nuts, or dried fruit)

Instructions

 

  1. Preheat oven to 350°F (175°C).
  2. Line an 8×8-inch pan with parchment paper.
  3. Mash bananas in a bowl.
  4. Mix in nut butter, honey, eggs, and vanilla.
  5. Combine oats, almond flour, baking powder, and salt.
  6. Stir dry ingredients into wet mixture.
  7. Fold in mix-ins.
  8. Spread batter evenly in pan.
  9. Bake 20–25 minutes.
  10. Cool completely before slicing.

 

Notes

Let bars cool fully before cutting for best texture. Customize with different mix-ins. Store or freeze for meal prep.
