2 medium sweet potatoes, cubed
1 tbsp olive oil
1 tsp cinnamon
Pinch of salt
2 eggs (optional)
1 cup Greek yogurt or plant-based yogurt
1 banana or ½ cup berries
2 tbsp nut butter
1 tbsp seeds or nuts
Optional maple syrup

Instructions

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with oil, cinnamon, and salt.
  3. Spread on a baking sheet in a single layer.
  4. Roast for 25–30 minutes, flipping halfway.
  5. Cook eggs if using.
  6. Prepare fruit and toppings.
  7. Assemble bowl with sweet potatoes as base.
  8. Add yogurt or eggs, fruit, nut butter, and seeds.
  9. Serve warm.
