Cottage Cheese Pancakes: Healthy & Flourless Breakfast

Soft and protein-rich cottage cheese pancakes made without flour, blended for an easy breakfast that’s quick, simple, and satisfying.

 

Ingredients

Scale

1 cup cottage cheese
2 eggs
1/2 cup rolled oats (or oat flour)
1/2 banana (optional)
1 tsp baking powder
1/2 tsp vanilla extract
Pinch of salt
24 tbsp milk (as needed)
Oil or butter for cooking

Instructions

 

  1. Blend oats into flour if needed.
  2. Add all ingredients to blender.
  3. Blend until smooth batter forms.
  4. Let batter rest for 5 minutes.
  5. Heat skillet and lightly grease.
  6. Pour small pancakes onto pan.
  7. Cook 2–3 minutes per side.
  8. Flip and cook until golden.
  9. Serve warm with toppings.

 

Notes

Use small pancakes for easier flipping. Adjust milk for consistency. Best served fresh but stores well for meal prep.
