1/2 head green cabbage, chopped
1 medium onion, diced
2 carrots, peeled and diced
2 celery stalks, chopped
1 zucchini, diced
1 bell pepper, diced
3 cloves garlic, minced
1 can (14.5 oz) crushed tomatoes
4 cups low-sodium vegetable broth
2 cups water (or as needed)
1 tsp Italian seasoning
1 bay leaf
Salt and pepper to taste
Optional: 1/4 tsp red pepper flakes
2 tbsp fresh parsley, chopped
In a large pot, sauté onions, carrots, and celery in a small amount of broth or cooking spray for 5–7 minutes.
Add garlic, zucchini, cabbage, and bell pepper. Cook 3 minutes.
Stir in tomatoes, broth, water, Italian seasoning, bay leaf, salt, and pepper.
Bring to a boil, then reduce to a simmer and cook uncovered for 25–30 minutes.
Remove bay leaf and stir in parsley. Adjust seasoning as needed.
Serve hot or store in the fridge for up to 5 days.
Add shredded chicken, turkey, or beans for a protein boost.
Freezes well for up to 3 months.
