Ingredients

  • 1/2 head green cabbage, chopped

  • 1 medium onion, diced

  • 2 carrots, peeled and diced

  • 2 celery stalks, chopped

  • 1 zucchini, diced

  • 1 bell pepper, diced

  • 3 cloves garlic, minced

  • 1 can (14.5 oz) crushed tomatoes

  • 4 cups low-sodium vegetable broth

  • 2 cups water (or as needed)

  • 1 tsp Italian seasoning

  • 1 bay leaf

  • Salt and pepper to taste

  • Optional: 1/4 tsp red pepper flakes

  • 2 tbsp fresh parsley, chopped

Instructions

  • In a large pot, sauté onions, carrots, and celery in a small amount of broth or cooking spray for 5–7 minutes.

  • Add garlic, zucchini, cabbage, and bell pepper. Cook 3 minutes.

  • Stir in tomatoes, broth, water, Italian seasoning, bay leaf, salt, and pepper.

  • Bring to a boil, then reduce to a simmer and cook uncovered for 25–30 minutes.

  • Remove bay leaf and stir in parsley. Adjust seasoning as needed.

  • Serve hot or store in the fridge for up to 5 days.

Notes

  • Add shredded chicken, turkey, or beans for a protein boost.
