PrintThis easy, flavorful casserole combines taco-seasoned beef, beans, corn, sour cream, cheese, and crushed Doritos into a comforting, crowd-pleasing Tex-Mex bake.
1 lb ground beef
1 packet taco seasoning
1/3 cup water
1 can refried beans (15 oz)
1 cup canned corn, drained
3/4 cup sour cream
2 cups shredded cheddar cheese
4 cups crushed nacho cheese Doritos, divided
Optional: diced tomatoes, lettuce, jalapeños, olives, avocado, green onions
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a skillet, brown the ground beef over medium heat (7–8 minutes). Drain fat.
Stir in taco seasoning and water. Simmer for 2–3 minutes.
Add refried beans and corn. Stir and cook until warmed through.
Spread half of the crushed Doritos in the casserole dish.
Top with beef and bean mixture.
Spread sour cream over the beef layer.
Sprinkle shredded cheese on top.
Finish with remaining Doritos.
Bake uncovered for 20–25 minutes, until cheese is melted and bubbling.
Let cool 5 minutes before serving. Garnish as desired.
