This easy, flavorful casserole combines taco-seasoned beef, beans, corn, sour cream, cheese, and crushed Doritos into a comforting, crowd-pleasing Tex-Mex bake.

Ingredients

1 lb ground beef
1 packet taco seasoning
1/3 cup water
1 can refried beans (15 oz)
1 cup canned corn, drained
3/4 cup sour cream
2 cups shredded cheddar cheese
4 cups crushed nacho cheese Doritos, divided
Optional: diced tomatoes, lettuce, jalapeños, olives, avocado, green onions

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

  • In a skillet, brown the ground beef over medium heat (7–8 minutes). Drain fat.

  • Stir in taco seasoning and water. Simmer for 2–3 minutes.

  • Add refried beans and corn. Stir and cook until warmed through.

  • Spread half of the crushed Doritos in the casserole dish.

  • Top with beef and bean mixture.

  • Spread sour cream over the beef layer.

  • Sprinkle shredded cheese on top.

  • Finish with remaining Doritos.

  • Bake uncovered for 20–25 minutes, until cheese is melted and bubbling.

  • Let cool 5 minutes before serving. Garnish as desired.
