1 tbsp olive oil
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
1 taco seasoning packet
1 (15 oz) can crushed tomatoes
2 tbsp tomato paste
4 cups beef broth
6–8 lasagna noodles, broken into pieces
4 oz cream cheese
1 cup black beans (optional)
1 cup corn (optional)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
Salt and pepper to taste
In a large pot, heat olive oil and brown ground beef.
Add onion and sauté until soft; stir in garlic.
Mix in taco seasoning.
Add crushed tomatoes and tomato paste. Simmer briefly.
Pour in beef broth and broken noodles. Simmer until noodles are tender.
Stir in cream cheese until melted and smooth.
Add beans and corn (if using). Simmer 5 minutes.
Stir in cheddar and mozzarella.
Adjust seasoning and serve hot.
