A cheesy, hearty fusion of taco soup, lasagna, and beef stew, this one-pot recipe is packed with flavor and perfect for cozy nights.

Ingredients

1 tbsp olive oil
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
1 taco seasoning packet
1 (15 oz) can crushed tomatoes
2 tbsp tomato paste
4 cups beef broth
68 lasagna noodles, broken into pieces
4 oz cream cheese
1 cup black beans (optional)
1 cup corn (optional)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
Salt and pepper to taste

Instructions

  • In a large pot, heat olive oil and brown ground beef.

  • Add onion and sauté until soft; stir in garlic.

  • Mix in taco seasoning.

  • Add crushed tomatoes and tomato paste. Simmer briefly.

  • Pour in beef broth and broken noodles. Simmer until noodles are tender.

  • Stir in cream cheese until melted and smooth.

  • Add beans and corn (if using). Simmer 5 minutes.

  • Stir in cheddar and mozzarella.

  • Adjust seasoning and serve hot.
