PrintTomato Orzo Soup is a cozy, one-pot recipe made with crushed tomatoes, tender orzo pasta, garlic, and herbs. Perfect for weeknight dinners or meal prep, and easy to make creamy or vegan.
2 tbsp olive oil
1 small onion, finely diced
3–4 garlic cloves, minced
1 (28 oz) can crushed tomatoes
4 cups vegetable or chicken broth
¾ cup uncooked orzo pasta
1 tsp dried basil
½ tsp dried oregano
Salt and pepper, to taste
1 tsp sugar (optional)
Optional: ½ cup heavy cream or half and half
Optional: 1–2 cups baby spinach or kale
Optional: 1 cup white beans or shredded chicken
Heat olive oil in a large pot over medium heat.
Add onion and cook 3–5 minutes until soft.
Stir in garlic and cook 30 seconds.
Add tomatoes, broth, herbs, salt, pepper, and optional sugar. Bring to a simmer.
Stir in orzo and cook uncovered for 8–10 minutes, stirring occasionally.
Optional: Add cream, greens, or beans. Cook until heated through.
Adjust seasoning and serve with toppings like parmesan or parsley.
Add more broth to thin leftovers.
Stir orzo well to prevent sticking.
Freeze before adding orzo for best texture.
Customize with beans, greens, or spicy add-ins.
