4 ears fresh corn, kernels removed
2 ripe avocados, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, finely diced
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon olive oil
Salt to taste
1/4 teaspoon black pepper
Boil or grill corn, then cool and remove kernels.
Combine corn, tomatoes, red onion, and cilantro in a bowl.
Whisk lime juice, olive oil, salt, and pepper.
Add diced avocado to bowl.
Pour dressing over salad and toss gently.
Serve immediately or chill briefly.
Add avocado just before serving to maintain color and texture.
