A fresh salad made with sweet corn, creamy avocado, and crisp vegetables tossed in a lime dressing.

Ingredients

4 ears fresh corn, kernels removed
2 ripe avocados, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, finely diced
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon olive oil
Salt to taste
1/4 teaspoon black pepper

Instructions

  • Boil or grill corn, then cool and remove kernels.

  • Combine corn, tomatoes, red onion, and cilantro in a bowl.

  • Whisk lime juice, olive oil, salt, and pepper.

  • Add diced avocado to bowl.

  • Pour dressing over salad and toss gently.

  • Serve immediately or chill briefly.

Notes

Add avocado just before serving to maintain color and texture.
