1½ lbs boneless, skinless chicken (thighs or breasts)
½ cup plain Greek yogurt
2 tbsp olive oil
Juice of ½ lemon
1 tsp paprika
1 tsp chili powder
½ tsp cumin
½ tsp garlic powder
¼ tsp cayenne pepper (optional)
Salt and pepper to taste
4 large tortillas or flatbreads
1 cup shredded romaine
1 tomato, sliced
½ cucumber, sliced
¼ red onion, thinly sliced
Optional sauces: garlic yogurt, chipotle mayo, or hummus
Mix yogurt, oil, lemon juice, and spices to create a marinade.
Add chicken and marinate for 30 minutes or more.
Grill chicken until cooked through and charred; let it rest, then slice.
Prepare the vegetables while chicken rests.
Warm tortillas to soften.
Layer sauce, chicken, and vegetables onto each tortilla.
Wrap tightly, slice, and serve.
