No-bake Speculaas Balls are creamy, spiced truffles made with crushed speculaas cookies and cream cheese — the perfect holiday treat!

Ingredients

  • 200g speculaas cookies or Biscoff

  • 150g cream cheese (or mascarpone)

  • 50g powdered sugar

  • ½ tsp cinnamon or speculaas spice (optional)

  • 150g chocolate (dark, milk, or white), for coating

  • Toppings: cookie crumbs, sprinkles, or cinnamon sugar (optional)

Instructions

  • Crush cookies into fine crumbs using a rolling pin or food processor.

  • In a bowl, mix cream cheese and powdered sugar until smooth.

  • Add cookie crumbs and optional spices. Mix until a dough-like consistency forms.

  • Chill mixture for 20–30 minutes if too soft.

  • Roll into 1-inch balls and place on a parchment-lined tray.

  • Refrigerate balls for 30 minutes to firm up.

  • Melt chocolate and dip each ball, placing them back on the tray.

  • Decorate immediately and chill until chocolate sets.

Notes

  • Store refrigerated up to 5 days.

  • Freeze up to 1 month.

  • For a vegan version, use plant-based cream cheese and chocolate.
