PrintNo-bake Speculaas Balls are creamy, spiced truffles made with crushed speculaas cookies and cream cheese — the perfect holiday treat!
200g speculaas cookies or Biscoff
150g cream cheese (or mascarpone)
50g powdered sugar
½ tsp cinnamon or speculaas spice (optional)
150g chocolate (dark, milk, or white), for coating
Toppings: cookie crumbs, sprinkles, or cinnamon sugar (optional)
Crush cookies into fine crumbs using a rolling pin or food processor.
In a bowl, mix cream cheese and powdered sugar until smooth.
Add cookie crumbs and optional spices. Mix until a dough-like consistency forms.
Chill mixture for 20–30 minutes if too soft.
Roll into 1-inch balls and place on a parchment-lined tray.
Refrigerate balls for 30 minutes to firm up.
Melt chocolate and dip each ball, placing them back on the tray.
Decorate immediately and chill until chocolate sets.
Store refrigerated up to 5 days.
Freeze up to 1 month.
For a vegan version, use plant-based cream cheese and chocolate.
