2 lbs boneless, skinless chicken thighs (or breasts)
1/2 cup unsalted butter
6–8 garlic cloves, minced
1/4 cup chicken broth or white wine
1 tsp dried thyme (or 1 tbsp fresh)
Salt and black pepper, to taste
1/4 cup heavy cream (optional)
Fresh parsley, for garnish
Optional: Sear chicken in a skillet with a bit of butter for golden edges.
Place chicken in slow cooker. Season with salt, pepper, and thyme.
In a small saucepan, melt butter. Stir in garlic and broth. Pour over chicken.
Cover and cook on low for 4–6 hours or high for 2.5–3.5 hours.
Stir in cream (if using) during the last 30 minutes.
Garnish with parsley and serve with garlic butter sauce spooned on top.
