4 boneless chicken breasts or thighs
2 tablespoons olive oil
Salt and pepper, to taste
3 garlic cloves, minced
1 pint cherry tomatoes, halved
1 red onion, sliced
1/4 cup balsamic vinegar
1 tablespoon honey
Optional: chopped basil or parsley for garnish
Preheat oven to 400°F (200°C).
Season chicken with salt and pepper.
Heat oil in a large skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden.
Add garlic, tomatoes, and onions to the pan.
Combine vinegar and honey, then pour over the ingredients.
Transfer the skillet to the oven and roast for 12–15 minutes, or until chicken reaches 165°F.
Let rest 5 minutes. Sprinkle with herbs and serve with pan sauce.
