1 cup protein pancake mix
2 large eggs
½ cup milk of choice
2 tbsp maple syrup
¾ cup cooked, crumbled sausage
Optional: ¼ cup shredded cheese, 2 tbsp chopped vegetables
Preheat oven to 350°F and grease a mini muffin pan.
Cook sausage, crumble it, and let cool on paper towels.
In a mixing bowl, whisk eggs, milk, and syrup together.
Stir in the pancake mix just until combined.
Fold in sausage and any extras.
Spoon into muffin cups, filling each ¾ full.
