PrintA fast and wholesome one-pan meal with chicken, honey BBQ glaze, rice, and veggies. Itβs a family-friendly recipe perfect for busy nights.
1 lb boneless, skinless chicken (breasts or thighs), diced
1 cup long-grain white rice
2 cups water or broth
1/3 cup BBQ sauce
2 tbsp honey
1 red bell pepper, diced
1/2 cup chopped onion
1/2 cup corn (fresh, frozen, or canned)
1 tsp garlic powder
1 tsp onion powder
1 tbsp olive oil
Salt and pepper to taste
Fresh parsley or green onions for garnish (optional)
Rinse rice under cold water and set aside.
Heat oil in a large skillet over medium-high heat.
Add chicken, season with garlic powder, onion powder, salt, and pepper. Cook for 4β5 minutes.
Stir in bell pepper, onion, and corn. Cook for another 3β4 minutes.
Mix honey and BBQ sauce, then pour into the pan. Stir to coat.
Add rice and water or broth. Bring to a boil, then cover and reduce heat to low. Simmer 18β20 minutes.
Remove from heat, let sit covered for 5 minutes.
Fluff with a fork and garnish with fresh herbs if desired.
