PrintCreamy, herb-packed chicken topped with melted mozzarella, made in one skillet and perfect for a rich and flavorful dinner.
2 boneless skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
2 garlic cloves, minced
1/2 cup low-sodium chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese (optional)
1/2 cup fresh basil, chopped
4 slices low-moisture mozzarella
Salt and pepper, to taste
Season chicken with salt and pepper.
Heat oil and butter in skillet over medium-high heat.
Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
Lower heat to medium. Add garlic and sauté for 30 seconds.
Pour in broth, stirring to deglaze the pan.
Stir in cream and let simmer for 3–4 minutes to thicken.
Add chopped basil and Parmesan (if using).
Return chicken to skillet and top with mozzarella slices.
Cover until cheese melts, or broil for a browned top.
Serve hot with sauce spooned over the chicken.
