Creamy, herb-packed chicken topped with melted mozzarella, made in one skillet and perfect for a rich and flavorful dinner.

Ingredients

2 boneless skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
2 garlic cloves, minced
1/2 cup low-sodium chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese (optional)
1/2 cup fresh basil, chopped
4 slices low-moisture mozzarella
Salt and pepper, to taste

Instructions

  • Season chicken with salt and pepper.

  • Heat oil and butter in skillet over medium-high heat.

  • Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.

  • Lower heat to medium. Add garlic and sauté for 30 seconds.

  • Pour in broth, stirring to deglaze the pan.

  • Stir in cream and let simmer for 3–4 minutes to thicken.

  • Add chopped basil and Parmesan (if using).

  • Return chicken to skillet and top with mozzarella slices.

  • Cover until cheese melts, or broil for a browned top.

  • Serve hot with sauce spooned over the chicken.
