PrintA creamy, one-pan pasta dish made with tender chicken, sun-dried tomatoes, garlic, parmesan, and a flavorful cream sauce. Comforting and quick enough for any night of the week.
2 boneless skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
2 cups chicken broth
1 cup heavy cream
2 cups short pasta (penne or similar)
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
3/4 cup grated parmesan cheese
Salt and pepper, to taste
Slice and season chicken. Sear in butter and oil until golden. Set aside.
Add garlic and sun-dried tomatoes. Cook 1–2 minutes.
Pour in broth and cream. Stir to combine.
Add uncooked pasta. Cover and simmer 10–12 minutes.
Slice chicken and return to pan. Cook 2–3 minutes.
Stir in parmesan. Taste and adjust seasoning.
Serve hot with more cheese, if desired.
