A creamy, one-pan pasta dish made with tender chicken, sun-dried tomatoes, garlic, parmesan, and a flavorful cream sauce. Comforting and quick enough for any night of the week.

Ingredients

2 boneless skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
2 cups chicken broth
1 cup heavy cream
2 cups short pasta (penne or similar)
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
3/4 cup grated parmesan cheese
Salt and pepper, to taste

Instructions

  • Slice and season chicken. Sear in butter and oil until golden. Set aside.

  • Add garlic and sun-dried tomatoes. Cook 1–2 minutes.

  • Pour in broth and cream. Stir to combine.

  • Add uncooked pasta. Cover and simmer 10–12 minutes.

  • Slice chicken and return to pan. Cook 2–3 minutes.

  • Stir in parmesan. Taste and adjust seasoning.

  • Serve hot with more cheese, if desired.
