PrintA rich and comforting chicken and potato bake with bold ranch flavor, crispy bacon, melted cheese, and a fresh onion garnish. Great for weeknight dinners or meal prep.
2 lbs russet potatoes, diced into small cubes
1.5 lbs boneless skinless chicken breasts, chopped
2 tbsp olive oil
1 packet ranch seasoning
1 tsp garlic powder
½ tsp paprika
1½ cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
2 green onions, sliced
Optional: sour cream or ranch dressing for topping
Preheat oven to 400°F (200°C).
In a large bowl, mix chicken, potatoes, olive oil, ranch seasoning, garlic powder, and paprika.
Spread mixture in a greased 9×13-inch pan.
Roast for 25–30 minutes, stirring halfway through.
When chicken is cooked and potatoes are soft, sprinkle with cheddar and bacon.
Return to oven for 5–7 minutes until cheese is melted.
Top with green onions and serve. Add sour cream or ranch if desired.
