1 large head cauliflower, cut into florets
3 tablespoons olive oil
2 tablespoons honey
1 1/2 tablespoons curry powder
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon fresh lemon juice
Optional chopped cilantro for garnish
Preheat oven to 425°F and line a baking sheet with parchment paper.
In a large bowl, whisk olive oil, honey, curry powder, garlic, salt, and pepper.
Toss cauliflower florets in the mixture until evenly coated.
Spread florets in a single layer on the baking sheet.
Roast for 20 to 25 minutes, flipping halfway through, until tender and golden.
Remove from oven and drizzle with lemon juice.
