A wholesome and comforting Ground Turkey Sweet Potato Bake, filled with lean protein, sweet veggies, and warm spices. A perfect make-ahead dinner or weeknight meal.

Ingredients

1 lb ground turkey
2 medium sweet potatoes, peeled and cubed
1 small onion, diced
2 cloves garlic, minced
1 red bell pepper, chopped
2 cups spinach
1 tbsp olive oil
1 tsp paprika
1/2 tsp ground cumin
Salt and pepper to taste
1/2 cup shredded cheese (optional)
1 egg, beaten (optional)

Instructions

  • Preheat oven to 375°F (190°C).

  • Heat olive oil in a skillet and sauté onion for 5 minutes.

  • Add garlic and bell pepper; cook another 2 minutes.

  • Stir in ground turkey and cook until browned, 6–8 minutes.

  • Season with paprika, cumin, salt, and pepper.

  • Add spinach and cook until wilted. Remove from heat.

  • Steam or microwave sweet potatoes until slightly tender.

  • In a large bowl, mix turkey mixture, sweet potatoes, and egg if using.

  • Pour into a greased 9×13-inch baking dish and top with cheese.

  • Bake for 30–35 minutes until sweet potatoes are soft and cheese is golden.

  • Cool for 5–10 minutes before serving.
