PrintA wholesome and comforting Ground Turkey Sweet Potato Bake, filled with lean protein, sweet veggies, and warm spices. A perfect make-ahead dinner or weeknight meal.
1 lb ground turkey
2 medium sweet potatoes, peeled and cubed
1 small onion, diced
2 cloves garlic, minced
1 red bell pepper, chopped
2 cups spinach
1 tbsp olive oil
1 tsp paprika
1/2 tsp ground cumin
Salt and pepper to taste
1/2 cup shredded cheese (optional)
1 egg, beaten (optional)
Preheat oven to 375°F (190°C).
Heat olive oil in a skillet and sauté onion for 5 minutes.
Add garlic and bell pepper; cook another 2 minutes.
Stir in ground turkey and cook until browned, 6–8 minutes.
Season with paprika, cumin, salt, and pepper.
Add spinach and cook until wilted. Remove from heat.
Steam or microwave sweet potatoes until slightly tender.
In a large bowl, mix turkey mixture, sweet potatoes, and egg if using.
Pour into a greased 9×13-inch baking dish and top with cheese.
Bake for 30–35 minutes until sweet potatoes are soft and cheese is golden.
Cool for 5–10 minutes before serving.
