A vibrant Mediterranean marinade made with olive oil, lemon, garlic, and herbs—perfect for tender, juicy grilled or roasted chicken.

Ingredients

  • ½ cup extra virgin olive oil

  • ¼ cup fresh lemon juice

  • 1 tbsp lemon zest

  • 34 garlic cloves, minced

  • 1 tbsp dried Greek oregano

  • 1 tsp fresh thyme (or ½ tsp dried)

  • Salt and black pepper, to taste

  • Optional: 1 tsp Dijon mustard

  • Optional: 2 tbsp plain Greek yogurt

Instructions

  • Whisk all ingredients in a bowl until combined.

  • Pour over 1½ to 2 lbs chicken in a zip-top bag or dish.

  • Marinate for at least 2 hours, up to 12 hours.

  • Grill, roast, or pan-sear until chicken reaches 165°F internally.

  • Rest 5–10 minutes before serving.

  • Add yogurt for a creamy, traditional twist.

  • Use on vegetables or tofu for a plant-based version.

  • Pairs well with Greek salad, roasted potatoes, or pita.
