½ cup extra virgin olive oil
¼ cup fresh lemon juice
1 tbsp lemon zest
3–4 garlic cloves, minced
1 tbsp dried Greek oregano
1 tsp fresh thyme (or ½ tsp dried)
Salt and black pepper, to taste
Optional: 1 tsp Dijon mustard
Optional: 2 tbsp plain Greek yogurt
Whisk all ingredients in a bowl until combined.
Pour over 1½ to 2 lbs chicken in a zip-top bag or dish.
Marinate for at least 2 hours, up to 12 hours.
Grill, roast, or pan-sear until chicken reaches 165°F internally.
Rest 5–10 minutes before serving.
Add yogurt for a creamy, traditional twist.
Use on vegetables or tofu for a plant-based version.
