PrintA cozy, skillet-style chicken dish with tender chicken breasts simmered in a garlicky tomato sauce and topped with melted mozzarella cheese. Perfect for a hearty dinner or meal prep.
4 boneless, skinless chicken breasts
2 tbsp olive oil
4 garlic cloves, minced
1 (28 oz) can crushed tomatoes
2 tbsp tomato paste
1 tsp Italian seasoning
Salt and black pepper, to taste
1½ cups shredded mozzarella cheese
Fresh basil (optional, for garnish)
Preheat oven to 400°F (200°C).
Pound chicken to even thickness and season both sides with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium-high. Sear chicken 4–5 min per side. Remove and set aside.
Lower heat, add garlic, and sauté 1 min. Stir in tomato paste, then add crushed tomatoes and Italian seasoning. Simmer 5–7 min.
Return chicken to skillet, spoon sauce over the top. Sprinkle mozzarella over each piece.
Bake uncovered for 10–15 min, or until cheese is melted and chicken reaches 165°F.
Let rest 5 min. Garnish with basil if using.
Use boneless thighs for juicier texture. Add red pepper flakes for heat. Freezes well for up to 2 months.
