A cozy, skillet-style chicken dish with tender chicken breasts simmered in a garlicky tomato sauce and topped with melted mozzarella cheese. Perfect for a hearty dinner or meal prep.

  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 4 garlic cloves, minced

  • 1 (28 oz) can crushed tomatoes

  • 2 tbsp tomato paste

  • 1 tsp Italian seasoning

  • Salt and black pepper, to taste

  • 1½ cups shredded mozzarella cheese

  • Fresh basil (optional, for garnish)

Instructions

  • Preheat oven to 400°F (200°C).

  • Pound chicken to even thickness and season both sides with salt and pepper.

  • Heat olive oil in a large oven-safe skillet over medium-high. Sear chicken 4–5 min per side. Remove and set aside.

  • Lower heat, add garlic, and sauté 1 min. Stir in tomato paste, then add crushed tomatoes and Italian seasoning. Simmer 5–7 min.

  • Return chicken to skillet, spoon sauce over the top. Sprinkle mozzarella over each piece.

  • Bake uncovered for 10–15 min, or until cheese is melted and chicken reaches 165°F.

  • Let rest 5 min. Garnish with basil if using.

Notes

Use boneless thighs for juicier texture. Add red pepper flakes for heat. Freezes well for up to 2 months.
