4 boneless, skinless chicken breasts
3 tablespoons fresh lime juice
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon paprika
Salt to taste
1/4 teaspoon black pepper
1 cup shredded Monterey Jack cheese, optional
2 ripe avocados, sliced
2 tablespoons chopped fresh cilantro
Whisk lime juice, olive oil, garlic, cumin, chili powder, paprika, salt, and pepper.
Marinate chicken for at least 30 minutes.
Heat skillet and cook chicken 5 to 7 minutes per side until done.
Add cheese during last 2 minutes if using.
Rest chicken briefly.
Top with avocado slices and cilantro before serving.
