PrintA refreshing salad of crisp cucumber, juicy tomatoes, creamy mozzarella, and fresh basil tossed in olive oil.
2 cups sliced cucumber
1 1/2 cups cherry tomatoes, halved
1 cup fresh mozzarella balls
1/4 cup fresh basil leaves, torn
2 tablespoons extra virgin olive oil
1 tablespoon balsamic glaze or vinegar, optional
Salt to taste
1/4 teaspoon black pepper
Slice cucumber and halve cherry tomatoes.
Place vegetables in a large bowl.
Add drained mozzarella balls.
Tear basil leaves and add to bowl.
Drizzle olive oil and balsamic if using.
Season with salt and pepper.
Toss gently and serve immediately.
Use fresh mozzarella for best texture. Serve chilled or at room temperature.
