2 large English cucumbers, thinly sliced
1 teaspoon salt
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon granulated sugar
1 garlic clove, minced
1/4 teaspoon red pepper flakes
1 tablespoon toasted sesame seeds, optional
2 tablespoons sliced green onions, optional
Slice cucumbers thinly and place in a bowl.
Sprinkle with salt and let sit 10 to 15 minutes.
Drain excess liquid and pat dry.
Whisk rice vinegar, soy sauce, sesame oil, sugar, garlic, and red pepper flakes.
