2–3 lbs boneless, skinless chicken breasts or thighs
½ cup chopped sun-dried tomatoes (drained if packed in oil)
3–4 cloves garlic, minced (or 1 tsp garlic powder)
1 tsp Italian seasoning
¼ tsp red pepper flakes (optional)
¾ cup low-sodium chicken broth
1 cup heavy cream
½–¾ cup grated parmesan cheese
Optional: 1 tbsp cornstarch + 1 tbsp cold water (for thickening)
Place chicken in the slow cooker.
Top with sun-dried tomatoes, garlic, seasoning, and red pepper flakes.
Pour in broth and heavy cream.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
Remove chicken, stir in parmesan, and optional cornstarch slurry if desired.
Return chicken to sauce and let rest 10–15 minutes.
Serve hot over mashed potatoes, pasta, or rice.
Use freshly grated parmesan for best results.
