2 English cucumbers, thinly sliced
3 medium carrots, peeled and julienned
1/4 small red onion, thinly sliced
3 tablespoons rice vinegar
1 tablespoon olive oil
1 teaspoon honey or maple syrup
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley or cilantro, optional

Instructions

  1. Wash and dry cucumbers and carrots thoroughly.

  2. Slice cucumbers thinly and julienne the carrots.

  3. Soak red onion in cold water for 10 minutes, then drain.

  4. In a small bowl, whisk vinegar, olive oil, honey, salt, and pepper.

  5. Combine cucumbers, carrots, and onion in a large bowl.
