PrintJuicy Crockpot Greek Chicken made with lemon, garlic, oregano, olives, and tender chicken thighs. A slow cooker Mediterranean dinner that’s easy, healthy, and packed with flavor.
2 lbs boneless skinless chicken thighs
1 red onion, sliced
4 garlic cloves, minced
1/4 cup extra virgin olive oil
Juice and zest of 1 lemon
1 tsp dried oregano
1/2 tsp dried thyme
1/2 cup low-sodium chicken broth
1/2 cup Kalamata olives, pitted
1 cup cherry tomatoes (optional)
Salt and pepper to taste
Crumbled feta and fresh parsley for serving
Optional: Marinate chicken in olive oil, lemon, garlic, and herbs for 1–4 hours.
Layer sliced onions in the crockpot. Add chicken on top.
Scatter olives and cherry tomatoes. Pour in chicken broth.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
Taste and adjust seasoning. Serve with feta and fresh herbs.
Add bell peppers or zucchini for more veggies. To thicken sauce, remove lid in last 30 minutes or use a cornstarch slurry. Great for meal prep and freezer-friendly.
