Juicy Crockpot Greek Chicken made with lemon, garlic, oregano, olives, and tender chicken thighs. A slow cooker Mediterranean dinner that’s easy, healthy, and packed with flavor.

Ingredients

  • 2 lbs boneless skinless chicken thighs

  • 1 red onion, sliced

  • 4 garlic cloves, minced

  • 1/4 cup extra virgin olive oil

  • Juice and zest of 1 lemon

  • 1 tsp dried oregano

  • 1/2 tsp dried thyme

  • 1/2 cup low-sodium chicken broth

  • 1/2 cup Kalamata olives, pitted

  • 1 cup cherry tomatoes (optional)

  • Salt and pepper to taste

  • Crumbled feta and fresh parsley for serving

Instructions

  • Optional: Marinate chicken in olive oil, lemon, garlic, and herbs for 1–4 hours.

  • Layer sliced onions in the crockpot. Add chicken on top.

  • Scatter olives and cherry tomatoes. Pour in chicken broth.

  • Cover and cook on low for 6–7 hours or high for 3–4 hours.

  • Taste and adjust seasoning. Serve with feta and fresh herbs.

Notes

Add bell peppers or zucchini for more veggies. To thicken sauce, remove lid in last 30 minutes or use a cornstarch slurry. Great for meal prep and freezer-friendly.
