4 boneless skinless chicken breasts
1 box (6 oz) stuffing mix (herb-seasoned or cornbread)
1 can (10.5 oz) cream of chicken soup
1/2 cup sour cream
3/4 cup low-sodium chicken broth
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp dried thyme
1/4 tsp black pepper
Place chicken breasts in the bottom of the crock pot. Season with garlic powder, onion powder, thyme, and black pepper.
In a bowl, mix together cream of chicken soup, sour cream, and chicken broth.
Sprinkle stuffing mix evenly over the chicken.
Pour the soup mixture over the stuffing, pressing down lightly to moisten.
Cover and cook on low for 6–7 hours or high for 3.5–4 hours.
Serve whole or shred chicken into stuffing before serving.
Use low-sodium soup and broth to reduce salt.
Add frozen veggies during the last hour for a complete meal.
Substitute Greek yogurt for a lighter option.
