  • 4 boneless skinless chicken breasts

  • 1 box (6 oz) stuffing mix (herb-seasoned or cornbread)

  • 1 can (10.5 oz) cream of chicken soup

  • 1/2 cup sour cream

  • 3/4 cup low-sodium chicken broth

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp dried thyme

  • 1/4 tsp black pepper

Instructions

  • Place chicken breasts in the bottom of the crock pot. Season with garlic powder, onion powder, thyme, and black pepper.

  • In a bowl, mix together cream of chicken soup, sour cream, and chicken broth.

  • Sprinkle stuffing mix evenly over the chicken.

  • Pour the soup mixture over the stuffing, pressing down lightly to moisten.

  • Cover and cook on low for 6–7 hours or high for 3.5–4 hours.

  • Serve whole or shred chicken into stuffing before serving.

Notes

  • Use low-sodium soup and broth to reduce salt.

  • Add frozen veggies during the last hour for a complete meal.
