1 ½ lbs chicken tenders or breast strips
1 cup buttermilk
1 cup panko breadcrumbs
½ cup grated Parmesan cheese
½ cup all-purpose flour
2 eggs, beaten
1 tsp garlic powder
1 tsp paprika
½ tsp onion powder
½ tsp salt
¼ tsp pepper
Olive oil spray or drizzle
Marinate chicken in buttermilk for at least 30 minutes.
Preheat oven to 425°F. Line a baking sheet with foil and place a wire rack on top.
Set up bowls with flour, beaten eggs, and breadcrumb mixture.
Dredge chicken in flour, dip in eggs, then coat in breadcrumb mix.
Arrange on rack and spray lightly with oil.
