These Crispy Corned Beef Fritters are a delicious way to repurpose leftover corned beef into golden, savory patties. Perfect for breakfast, lunch, or snacking.

Ingredients

  • 1 ½2 cups cooked corned beef, chopped or shredded

  • 1 cup mashed potatoes (or 1 cup raw grated potato, squeezed dry)

  • 1 small onion, finely chopped

  • ½ cup all-purpose flour

  • 1 egg

  • 1 tsp baking powder

  • 23 tbsp milk or water

  • Salt and pepper to taste

  • Optional: chopped parsley, shredded cheese, mustard powder

Instructions

  • In a bowl, mix corned beef, mashed potatoes, onion, flour, egg, baking powder, and seasoning.

  • Add milk or water gradually until batter is thick and spoonable.

  • Heat oil in a pan over medium-high heat.

  • Drop spoonfuls of batter into hot oil and flatten.

  • Fry 3–4 minutes per side until golden and crispy.

  • Drain on paper towels.

  • Serve warm with your favorite sauce or toppings.

  • Use canned corned beef or leftovers.
