  • 1 lb ground beef

  • 1 tbsp olive oil

  • 1 medium yellow onion, diced

  • 3 garlic cloves, minced

  • 3 cups russet potatoes, peeled and cubed

  • 1 can (14.5 oz) diced tomatoes

  • 2 cups frozen mixed vegetables

  • 4 cups beef broth (low sodium)

  • 4 oz cream cheese, cubed

  • 1 cup heavy cream

  • 1 tsp smoked paprika

  • 1/2 tsp cumin

  • 1 tsp dried oregano

  • Salt and pepper to taste

  • Optional: crushed red pepper flakes

Instructions

  • In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.

  • Add diced onion and sauté until soft, about 4 minutes. Stir in garlic and cook 1 minute.

  • Add diced tomatoes, potatoes, frozen vegetables, and seasonings. Pour in beef broth and stir.

  • Bring to a boil, then reduce to a simmer. Cover and cook for 20–25 minutes, until potatoes are tender.

  • Stir in cream cheese until melted, then add heavy cream. Simmer uncovered for 5–7 minutes.

  • Taste and adjust seasoning. Serve hot with bread or crackers.

Notes

  • Use sausage or ground turkey for variation.

  • For extra flavor, add chipotle or chili powder.

  • Store in the fridge up to 4 days or freeze up to 3 months.
