1 lb ground beef
1 tbsp olive oil
1 medium yellow onion, diced
3 garlic cloves, minced
3 cups russet potatoes, peeled and cubed
1 can (14.5 oz) diced tomatoes
2 cups frozen mixed vegetables
4 cups beef broth (low sodium)
4 oz cream cheese, cubed
1 cup heavy cream
1 tsp smoked paprika
1/2 tsp cumin
1 tsp dried oregano
Salt and pepper to taste
Optional: crushed red pepper flakes
In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
Add diced onion and sauté until soft, about 4 minutes. Stir in garlic and cook 1 minute.
Add diced tomatoes, potatoes, frozen vegetables, and seasonings. Pour in beef broth and stir.
Bring to a boil, then reduce to a simmer. Cover and cook for 20–25 minutes, until potatoes are tender.
Stir in cream cheese until melted, then add heavy cream. Simmer uncovered for 5–7 minutes.
Taste and adjust seasoning. Serve hot with bread or crackers.
Use sausage or ground turkey for variation.
For extra flavor, add chipotle or chili powder.
Store in the fridge up to 4 days or freeze up to 3 months.
