12 oz andouille sausage, sliced
12 oz penne pasta
1 tbsp olive oil
1 small onion, chopped
1 red bell pepper, sliced
1 green bell pepper, sliced
3 garlic cloves, minced
2 ½ cups chicken broth
1 ¼ cups heavy cream
1 tbsp Cajun seasoning
½ tsp salt (adjust to taste)
½ cup grated Parmesan cheese
Heat oil in a large pot over medium-high. Add sausage and cook until browned.
Add onion and peppers. Cook 4–6 minutes. Stir in garlic and cook 1 minute more.
Add Cajun seasoning, dry pasta, and chicken broth. Stir well.
Bring to a boil, then reduce to a simmer. Cover and cook for 12–14 minutes, stirring occasionally.
Add cream and let it simmer for 2–3 minutes.
Remove from heat and stir in Parmesan. Let rest for 5 minutes before serving.
