This creamy Cajun pasta is loaded with smoky sausage, bold spices, and a silky sauce — all cooked in one pot for an easy, flavorful dinner.

  • 12 oz andouille sausage, sliced

  • 12 oz penne pasta

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 3 garlic cloves, minced

  • 2 ½ cups chicken broth

  • 1 ¼ cups heavy cream

  • 1 tbsp Cajun seasoning

  • ½ tsp salt (adjust to taste)

  • ½ cup grated Parmesan cheese

Instructions

  • Heat oil in a large pot over medium-high. Add sausage and cook until browned.

  • Add onion and peppers. Cook 4–6 minutes. Stir in garlic and cook 1 minute more.

  • Add Cajun seasoning, dry pasta, and chicken broth. Stir well.

  • Bring to a boil, then reduce to a simmer. Cover and cook for 12–14 minutes, stirring occasionally.

  • Add cream and let it simmer for 2–3 minutes.

  • Remove from heat and stir in Parmesan. Let rest for 5 minutes before serving.
