1 lb ground beef
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 tbsp tomato paste
1 tbsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
1 (14.5 oz) can crushed tomatoes
4 cups beef broth
1 (15 oz) can kidney beans, drained
1½ cups uncooked elbow macaroni
2 cups shredded sharp cheddar cheese
Salt and pepper, to taste
Optional: diced jalapeños or hot sauce
Heat oil in a large pot. Add ground beef and cook until browned.
Add onions and garlic; cook until soft.
Stir in tomato paste and spices; cook for 1–2 minutes.
Add crushed tomatoes, broth, and beans; bring to a simmer.
Stir in pasta; cook 10–12 minutes, stirring occasionally.
Reduce heat and stir in cheese until melted.
Season to taste and add extra spice if desired.
Serve hot with your favorite toppings.
