1.5 lbs sirloin steak, cut into 1-inch cubes
Salt and black pepper, to taste
1 tbsp olive oil
4 tbsp unsalted butter
3 garlic cloves, minced
1 tbsp Dijon mustard
1 tbsp fresh lemon juice
1/4 tsp red pepper flakes
2 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped
Pat steak dry and season with salt and pepper.
Heat olive oil in a skillet over high heat.
Sear steak cubes in batches for 1½–2 minutes per side. Remove and set aside.
Lower heat and melt butter in the same pan.
Add garlic and cook for 30 seconds.
Stir in mustard, lemon juice, red pepper flakes, salt, and pepper.
Return steak to skillet and toss to coat.
Stir in herbs and serve hot.
