3 cups frozen shredded hash browns, thawed and dried
1 tbsp olive oil or butter
1/2 tsp salt
1/4 tsp pepper
4 pre-cooked chicken sausage links, sliced
1/2 cup diced bell pepper
1/4 cup diced onion
6 large eggs
1/4 cup milk or dairy-free alternative
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
Optional toppings: herbs, salsa, hot sauce
Preheat oven to 425°F (220°C). Line a baking pan with parchment.
Press hash browns into a 10–12 inch circle, drizzle with oil, season, and bake 20–25 minutes.
Cook sausage in a skillet until browned. Remove and set aside.
Sauté peppers and onions until soft.
Whisk eggs with milk and seasoning. Cook gently until just beginning to set.
Spread eggs on the crust, then top with sausage, vegetables, and cheese.
Bake another 8–10 minutes until cheese melts and bubbles.
Cool briefly, slice, and serve warm.
