2 tbsp chopped cilantro
1 can black beans, rinsed
1 cup corn kernels (fresh or frozen)
1 avocado, diced
1 cup shredded romaine
1 cup cherry tomatoes, halved
¼ cup red onion, sliced
1 jalapeño, sliced (optional)
½ cup shredded cheese (optional)
Marinate chicken in olive oil, lime juice, and spices for 30 minutes.
