Creamy, cheesy, and packed with bold taco flavor, this one-pot Cheesy Taco Pasta combines ground beef, salsa, and pasta in a quick and satisfying weeknight dinner.

Ingredients

1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 lb ground beef
1 packet taco seasoning (about 2 tbsp)
2½ cups beef broth
1½ cups chunky salsa
2 cups uncooked rotini or similar pasta
4 oz cream cheese
1½ cups shredded cheddar cheese
Salt, to taste
Optional: green onions, cilantro for garnish

Instructions

  • Heat oil in a large pot over medium heat. Add onion and cook until soft, about 3–4 minutes.

  • Stir in garlic and cook another 30 seconds.

  • Add ground beef, cook until browned, and drain excess fat.

  • Stir in taco seasoning and cook for 1 minute.

  • Add beef broth, salsa, and pasta. Stir and bring to a boil.

  • Reduce heat, cover, and simmer for 12–14 minutes, stirring occasionally.

  • Turn off heat. Mix in cream cheese until smooth.

  • Stir in cheddar until melted and creamy.

  • Taste and adjust seasoning. Serve with toppings if desired.
