PrintCreamy, cheesy, and packed with bold taco flavor, this one-pot Cheesy Taco Pasta combines ground beef, salsa, and pasta in a quick and satisfying weeknight dinner.
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 lb ground beef
1 packet taco seasoning (about 2 tbsp)
2½ cups beef broth
1½ cups chunky salsa
2 cups uncooked rotini or similar pasta
4 oz cream cheese
1½ cups shredded cheddar cheese
Salt, to taste
Optional: green onions, cilantro for garnish
Heat oil in a large pot over medium heat. Add onion and cook until soft, about 3–4 minutes.
Stir in garlic and cook another 30 seconds.
Add ground beef, cook until browned, and drain excess fat.
Stir in taco seasoning and cook for 1 minute.
Add beef broth, salsa, and pasta. Stir and bring to a boil.
Reduce heat, cover, and simmer for 12–14 minutes, stirring occasionally.
Turn off heat. Mix in cream cheese until smooth.
Stir in cheddar until melted and creamy.
Taste and adjust seasoning. Serve with toppings if desired.
