1 lb ground beef
1 packet taco seasoning or 2 tbsp homemade
1/3 cup water
1 cup salsa or tomato sauce
1 can (15 oz) black beans, drained and rinsed
2 cups tortilla chips, lightly crushed
1½ cups shredded cheddar or Mexican blend cheese
Optional toppings: diced tomato, green onion, sour cream, cilantro, avocado
In a large skillet, cook ground beef over medium-high heat until browned. Drain excess fat.
Stir in taco seasoning and water. Simmer for 2 minutes.
Add salsa and black beans. Cook 3–5 minutes.
Reduce heat and mix in some crushed tortilla chips.
Sprinkle cheese over the top and melt with lid or broiler.
Add garnishes and serve hot.
