This easy dinner features roasted potatoes, savory smoked sausage, and gooey melted cheddar, all seasoned with zesty ranch. A hearty, flavor-packed meal perfect for weeknights.

Ingredients

2 lbs red or Yukon Gold potatoes, diced
14 oz smoked sausage, sliced
1 packet ranch seasoning
2–3 tablespoons olive oil or butter
1½ cups shredded cheddar cheese
Optional garnish: parsley or green onions

Instructions

  • Preheat oven to 400°F and lightly grease a baking dish.

  • Cut potatoes into small cubes and slice sausage into rounds.

  • Toss with oil and ranch seasoning until evenly coated.

  • Transfer to dish, cover with foil, and bake for 30 minutes.

  • Remove foil, stir, and roast uncovered for 20–25 minutes.

  • Add cheese and return to oven for 5–7 minutes until melted.

  • Let sit for 5 minutes before serving. Garnish if desired.
