2 lbs red or Yukon Gold potatoes, diced
14 oz smoked sausage, sliced
1 packet ranch seasoning
2–3 tablespoons olive oil or butter
1½ cups shredded cheddar cheese
Optional garnish: parsley or green onions
Preheat oven to 400°F and lightly grease a baking dish.
Cut potatoes into small cubes and slice sausage into rounds.
Toss with oil and ranch seasoning until evenly coated.
Transfer to dish, cover with foil, and bake for 30 minutes.
Remove foil, stir, and roast uncovered for 20–25 minutes.
Add cheese and return to oven for 5–7 minutes until melted.
Let sit for 5 minutes before serving. Garnish if desired.
