A creamy and cheesy baked casserole featuring seasoned ground beef, cooked rice, and a savory sauce. Perfect for easy dinners, meal prep, and feeding a crowd.

Ingredients

  • 1 lb ground beef

  • ¾ cup uncooked long-grain white rice (or 2 cups cooked)

  • 1 medium onion, chopped

  • 23 cloves garlic, minced

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup milk

  • 2 cups shredded cheddar cheese, divided

  • ½ tsp paprika

  • Salt and pepper to taste

  • 1 tbsp oil or butter

  • Optional: ½ cup diced bell pepper or 1 cup mixed vegetables

Instructions

  • Cook rice and set aside.

  • In a skillet, heat oil and cook onion until soft. Add garlic and cook for 30 seconds.

  • Add ground beef, season, and cook until browned. Drain fat.

  • In a bowl, combine beef, rice, soup, milk, 1½ cups cheese, and optional veggies.

  • Spread into a greased 9×13 baking dish. Top with remaining cheese.

  • Bake uncovered at 350°F for 25–30 minutes, until bubbly. Let rest before serving.
