PrintA creamy and cheesy baked casserole featuring seasoned ground beef, cooked rice, and a savory sauce. Perfect for easy dinners, meal prep, and feeding a crowd.
1 lb ground beef
¾ cup uncooked long-grain white rice (or 2 cups cooked)
1 medium onion, chopped
2–3 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
½ cup milk
2 cups shredded cheddar cheese, divided
½ tsp paprika
Salt and pepper to taste
1 tbsp oil or butter
Optional: ½ cup diced bell pepper or 1 cup mixed vegetables
Cook rice and set aside.
In a skillet, heat oil and cook onion until soft. Add garlic and cook for 30 seconds.
Add ground beef, season, and cook until browned. Drain fat.
In a bowl, combine beef, rice, soup, milk, 1½ cups cheese, and optional veggies.
Spread into a greased 9×13 baking dish. Top with remaining cheese.
Bake uncovered at 350°F for 25–30 minutes, until bubbly. Let rest before serving.
