1 lb ground beef
1 small onion, chopped
2 garlic cloves, minced
1 packet taco seasoning
1/4 cup water
6 small flour tortillas
1 cup sour cream
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup red enchilada sauce
Optional toppings: diced tomato, avocado, green onion, shredded lettuce
Preheat oven to 375°F and grease an oven-safe skillet.
Sauté onion in skillet for 2–3 minutes. Add garlic and cook briefly.
Add beef, cook until browned, then drain fat.
Stir in taco seasoning and water. Simmer for 2–3 minutes.
Remove half the beef. Place a tortilla in the skillet.
Layer with beef, sauce, sour cream, and cheese. Repeat layers.
Finish with a top tortilla and a layer of cheese.
Bake for 20–25 minutes until bubbly and golden.
Rest for 5 minutes before slicing. Add toppings and serve.
