This baked skillet dish layers spiced beef, cheese, tortillas, sour cream, and enchilada sauce into a golden, bubbly meal that’s crisp, creamy, and packed with Tex-Mex flavor.

Ingredients

1 lb ground beef
1 small onion, chopped
2 garlic cloves, minced
1 packet taco seasoning
1/4 cup water
6 small flour tortillas
1 cup sour cream
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup red enchilada sauce
Optional toppings: diced tomato, avocado, green onion, shredded lettuce

Instructions

  • Preheat oven to 375°F and grease an oven-safe skillet.

  • Sauté onion in skillet for 2–3 minutes. Add garlic and cook briefly.

  • Add beef, cook until browned, then drain fat.

  • Stir in taco seasoning and water. Simmer for 2–3 minutes.

  • Remove half the beef. Place a tortilla in the skillet.

  • Layer with beef, sauce, sour cream, and cheese. Repeat layers.

  • Finish with a top tortilla and a layer of cheese.

  • Bake for 20–25 minutes until bubbly and golden.

  • Rest for 5 minutes before slicing. Add toppings and serve.
