1 medium head green cabbage, thinly sliced
1 large carrot, julienned
1 red bell pepper, thinly sliced
1 small yellow onion, thinly sliced
2 cloves garlic, minced
2 tablespoons oil
1 tablespoon butter

2 green onions, chopped
1 teaspoon salt, or to taste
1/2 teaspoon freshly ground black pepper
Heat oil and butter in a large skillet over medium heat.
Add onions and cook until slightly softened.
Stir in garlic and cook briefly.
Add carrots and bell pepper and cook 3 to 4 minutes.
Add cabbage, thyme, and whole Scotch bonnet pepper.
Season with salt and pepper and toss to combine.
Cover and cook 5 to 7 minutes until cabbage is tender but slightly crisp.
Remove lid and cook 2 to 3 more minutes to reduce moisture.
Remove thyme stems and Scotch bonnet.
Stir in green onions and serve.
Keep Scotch bonnet whole for milder heat. Avoid overcooking to maintain texture. Store leftovers in the refrigerator up to three days.
