1 red bell pepper, thinly sliced
1 small yellow onion, thinly sliced

2 tablespoons oil
1 tablespoon butter
2 sprigs fresh thyme

1 teaspoon salt, or to taste
1/2 teaspoon freshly ground black pepper

Instructions

  • Heat oil and butter in a large skillet over medium heat.

  • Add onions and cook until slightly softened.

  • Stir in garlic and cook briefly.

  • Add carrots and bell pepper and cook 3 to 4 minutes.

  • Add cabbage, thyme, and whole Scotch bonnet pepper.

  • Season with salt and pepper and toss to combine.

  • Cover and cook 5 to 7 minutes until cabbage is tender but slightly crisp.

  • Remove lid and cook 2 to 3 more minutes to reduce moisture.
